We build strong relationships with each farm that we work with, to ensure they’re raising livestock the way that we feel is right. That means animals raised on pasture, when possible, and fed a species appropriate diet free of antibiotics and hormones.

My name is jamie and i’m the head butcher/owner at j. Waldron Butchers.

We are whole-animal butchers and Our approach is to utilize the WHOLE animal to the best of our abilities.

I was born in Windsor, Ontario, and raised in the small rural town of Harrow. I started my career in a small country butcher shop as a teenager. Since then, I’ve dedicated 20+ years to the art of butchery. I’ve worked at some of the top butcher shops in Canada, helped craft menus and meat programs for restaurant groups, consulted for butcher shops, and worked with abattoirs in Ontario.  In 2013, I wrote the Home Butchering Handbook (Penguin/Alpha). It covers all aspects of traditional meat cutting, from whole carcass to usable cuts.

In 2020 I started J. Waldron Butchers as a way to get through the lockdown. It’s since evolved into a physical location in Hamilton, ON.

Butchery Workshops

Learn traditional butchery techniques and methods. Whole animal butchery classes are geared towards anyone looking to learn how to go from whole-animal carcass to fresh meat cuts. Private bookings with Jamie are also available upon request.
